Ingredients: Pita, Sour Cream, Feta Cheese, Salmon Lox, Arugula, Egg, Salt & Pepper
This is a lovely little recipe that I made up, inspired by a similar dish I had at a Greek restaurant. It’s so simple that I wanted to share it with you all! Start with a pita, spread on some sour cream, and sprinkle with feta cheese. Then layer your salmon lox followed by the arugula. Bring a pot of water to boil, and toss in your egg super fast. Let the egg white firm up, then rescue your egg and place on top of the arugula. When you cut into your egg you will get all the warm and yummy egg yolk. Season with salt & pepper to taste. So easy and so delicious! I’m hungry just thinking about this great dish. Enjoy!
